In this free, two-hour nutrition education class offered at the Community Education Center and taught by instructors from the Department of Exercise & Nutrition Sciences, explore the rich traditions of Mexican cuisine and find out how culturally preserved foods and cooking methods can support lifelong health. Learn about the nutritional benefits of traditional ingredients such as corn, beans, vegetables, herbs, and spices, with a focus on fiber, phytochemicals, and other compounds that contribute to disease prevention and overall wellness.
